Air Fryer Times
Basket cooking times, and why they are not oven times minus ten.
An air fryer is a small convection oven with a fast fan and very little space, and every number that makes it useful comes from those three facts.
It runs hotter at the food surface than an oven set to the same temperature, because the air moves fast enough to strip away the insulating layer that normally sits against the food. That is why air fryer times are roughly 20 to 25% shorter than oven times for the same item, and why the surface browns while a conventional oven is still warming up.
Basket load is not a detail
The mechanism is air reaching every surface. Crowd the basket and the mechanism stops working — not gradually, but in a way no amount of extra time repairs.

Two batches of four finish sooner, and better, than one crowded batch of eight. This is the most common reason air fryer results disappoint.
Where the numbers stop
Air fryer dials are less accurate than oven dials, and there is no standard basket geometry. Two five-quart machines set to 400°F can differ by 25°F at the food surface, and a drawer-style basket behaves differently from a rack-style oven model.
So the first time you cook something in a new machine, the probe reading is calibration rather than a check. Note it once and you will not need to guess again.
The safety numbers do not change
Convection speed changes the time, not the target. Poultry still reaches 165°F, ground meat 160°F, whole cuts 145°F with a rest.
What does change is carryover: a small piece in fast-moving air gains only 2 to 4°F after it comes out, against the 5 to 10°F a roast gains. Pull temperature and serving temperature sit much closer together here than they do in an oven, which is why air fryer cooking is less forgiving of a late check.
